You do realize that nearly every single summon was taken from Myth? Take Ifrit and Shiva. They are deities in the Hindu religion. Odin is the Norse God of Magic, Poetry, and Death, and is viewed as the Zeus of Norse Gods (basically, King of the Gods)

Wouldn't they all qualify as 'wierd' when compared to the totally 'normal' religions we have today? It's not really that good. Actually, it kinda sucks, IMO. The Enuma Elish [literally, "When on High"] is a much better book for information on their beliefs, and the (simon) necronomicon is kinda cool for inspirational purposes. It shows a 'trend towards being less strictly accurate and more strictly awesome'. Not to offend anyone >.> I'd advise we stick to talk of mythology and not religion unless you wan to offend someone, because that's basically all the latter leads to on culturally nonunified forums. (The very word 'myth' implies that it is a story, not a truth, and many things once 'true' are now 'myths', and perhaps this is how it's always been)

Norse is just weird. As for Sumerian, Gilgamesh is something I hope to read in the future. It's not weird really. I quite like how it is in some sense unique compared to most myths and such. Everything is exactly planned out, and yet they still try. They know nothing they do can stop it... It is the best shit ever, So they did all this in their spare time whilst not acting as summons on Final Fantasy? WHy yes they did. And the sold Girl Guide cookies to the homeless.

Can't believe I voted but forgot to post my favorite. Hell this is what I am going to college to teach!
Norse mythology for the win! Tyr and Heimdall, though not a lot of myths around them, are quite possible the coolest deities to ever grace mythology. That horn... Amazing. Having your hand bit off, and knowing it! God of Courage! Haha!
Only close second is the story of Hephastus and how he became God of Tropical Fish (He's the God of Fire and Forge from Greek)

Technically I should vote for Greek as I have a qualification in Classical Civilisation (A level to the UKers), which is the study of ancient Greece... Yes.. Everything from politics, law, literature, architecture and mythology; anything about Ancient Greece, I've probably studied it.
Anyway, I prefer.. I find it more interesting, also, most of the 'Gods' or deities from Chinese mythology were sometimes actual people... supposedly : D
The only Japanese mythology I know are the Tengu and the story of Amaterasu.
Norse mythology, well.. I have a Pagan friend who talks to me about all that kind of stuff, as I'm the only friend of hers that will listen.
Aztec, I did that in middle school (Junior school)... We studied the rituals and gods... also coloured some gods in : D
Anyway - Chinese mythology
